The Sun 1919 Newspaper printed gem scone recipe:
  • 40g (approx. 1.5 oz) butter, softened
  • 1/3 Cup (approx. 75g) caster sugar
  • 1 egg, beaten
  • 1/2 Cup (approx. 225g) self-raising flour
  • 1 cup (250ml) milk
  • Extra melted butter for greasing 
Method
  1. Preheat the irons: Preheat your oven to 220°C (200°C fan-forced). Place your ungreased 12-hole gem irons into the hot oven so they get piping hot. 
  2. Cream the mixture: In a small bowl, beat the softened butter and caster sugar with an electric mixer until light and fluffy. Gradually add the beaten egg and beat until combined. 
  3. Combine batter: Alternately stir in the sifted self-raising flour and milk in 2 separate batches, stirring until a smooth, slightly runny batter forms.
  4. Bake: Carefully remove the hot gem irons from the oven and quickly brush each hole with a little melted butter. Spoon the batter into each divot until about 3/4 full. 
  5. Cook: Bake for about 10 minutes, or until the scones are lightly browned and springy to the touch. 
Serve the gem scones hot out of the oven, traditionally split open with fresh butter, jam, or cream! 
NB: to enable your cast iron cookware to continue to serve you for another 100 years, make sure you follow careful steps after EVERY USE to season it.
